Gentle Fermented Pickles (Low-Histamine Friendly)

February is about steadiness.

🥒Recipe

These are not sharp, sour deli pickles. They’re lightly fermented, mineral-rich, and designed to support digestion without overwhelming sensitive systems

Ingredients

  • 4–5 small cucumbers (whole or spears)

  • 1½ teaspoons Diamond Kosher Salt

  • 1½ cups filtered water (or enough to fully cover + extra for brine)

  • 1–2 garlic cloves (optional)

  • Fresh dill (optional)

Make the Brine: 

  1. Stir salt into filtered water until dissolved.

  2. Pack a mason jar (or other glass jar that has a lid)

    Place cucumbers, garlic, and dill into a clean glass jar.

    Pour brine over everything until fully submerged.

  3. Add a little extra water on top so there is additional brine available for sipping shots before lunch or dinner.

  4. Keep all vegetables below the liquid line. Cover with the lid

    Let sit at room temperature 24–48 hours (up to 3 days max).

    That way it is a low histamine ferment and easier to tolerate

  5. Once ready, refrigerate.

    Don’t Throw Away the Brine

The Brine

That cloudy brine is full of:

- beneficial bacteria

- minerals

- digestive signaling compounds

Ways to use it:

• Sip 1 teaspoon before meals

• Add to homemade salad dressing

• Stir into cooked vegetables after cooking

Think of brine as digestive information, not just flavor.

How Much to Start With

Start with 1 teaspoon a day and gently increase from there.
