Recipe
Gentle on the gut • enzyme-supportive • real-food fats
Makes about 1½ cups
Ingredients
1 whole egg, at room temperature
1 egg yolk, at room temperature
1 teaspoon Dijon mustard
1 tablespoon fresh lemon juice
1 tablespoon raw apple cider vinegar
¾–1 cup extra-virgin olive oil
1 generous pinch sea salt
Instructions
In a food processor:
Place the whole egg, egg yolk, Dijon mustard, lemon juice, apple cider vinegar, and sea salt into the bowl of a food processor.
Blend
Process for about 30 seconds, until fully blended and smooth.Slowly add oil
With the motor running, very slowly drizzle in the olive oil, starting drop by drop, then continuing in a thin steady stream. Process until thick and emulsified.Finish
Add 1 drop Lemon Vitality essential oil and pulse once or twice to fully incorporate. Taste and adjust salt or lemon juice if needed.Gentle fermentation
Transfer to a clean glass jar, cover, and allow to sit at room temperature for 6 hours on the counter. Then refrigerate.
Storage
Refrigerate in a sealed glass jar
Best used within 7–10 days
Texture will thicken slightly as it chills
How to Use
Base for simple salad dressings
Chicken or tuna salad
Vegetable dips
Spread for breads
Great with eggs, chicken, or fish as a sauce
