Lacto-Fermented Mayonnaise (with Young Living's Lemon Vitality Essential Oil)  

January doesn’t need to start with restriction, detoxes, or doing more.

It needs stability.

This month's theme for "Gut Over It" focuses on simple, grounding habits that calm the gut and steady the brain — especially for overwhelmed women, picky eaters, and sensitive nervous systems.

Today’s anchor is one of my most-used kitchen staples:

  Lacto-Fermented Mayonnaise (with Young Living's Lemon Vitality Essential Oil)  

This isn’t just “better mayo.”
It’s nervous-system food.

Traditional mayo made with industrial seed oils can quietly fuel inflammation. This version does the opposite.

Why this matters:

Recipe

Gentle on the gut • enzyme-supportive • real-food fats

Makes about 1½ cups

Ingredients

  • 1 whole egg, at room temperature

  • 1 egg yolk, at room temperature

  • 1 teaspoon Dijon mustard

  • 1 tablespoon fresh lemon juice

  • 1 tablespoon raw apple cider vinegar 

  • ¾–1 cup extra-virgin olive oil

  • 1 generous pinch sea salt

  • 1 drop Young Living Lemon Vitality™ essential oil

Instructions

In a food processor: 

  1. Place the whole egg, egg yolk, Dijon mustard, lemon juice, apple cider vinegar, and sea salt into the bowl of a food processor.

  2. Blend
    Process for about 30 seconds, until fully blended and smooth.

  3. Slowly add oil
    With the motor running, very slowly drizzle in the olive oil, starting drop by drop, then continuing in a thin steady stream. Process until thick and emulsified.

  4. Finish
    Add 1 drop Lemon Vitality essential oil and pulse once or twice to fully incorporate. Taste and adjust salt or lemon juice if needed.

  5. Gentle fermentation
    Transfer to a clean glass jar, cover, and allow to sit at room temperature for 6 hours on the counter.  Then refrigerate.

Storage

  • Refrigerate in a sealed glass jar

  • Best used within 7–10 days

  • Texture will thicken slightly as it chills

How to Use

  • Base for simple salad dressings

  • Chicken or tuna salad

  • Vegetable dips

  • Spread for breads

  • Great with eggs, chicken, or fish as a sauce

Why This Works

This mayonnaise uses natural acids (lemon juice + apple cider vinegar) to gently support fermentation, digestion, and shelf life — making it dairy-free and appropriate for sensitive people (which is all of us). Sitting it on the countertop for 6 hours allows it to gently lacto-ferment. 

Extra-virgin olive oil provides stable, brain-supportive fats, while Lemon Vitality adds brightness and subtle digestive support when used correctly and sparingly.
